  • 1 green bell pepper, finely chopped
  • 1/2 cup milk
  • 2 large eggs, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon vinegar (apple cider or white)
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, green bell pepper, milk, eggs, Worcestershire sauce, thyme, salt, and pepper.
  3. Gently mix until just combined.
  4. Transfer to the loaf pan, shaping evenly.
  5. In a small bowl, whisk together ketchup, brown sugar, vinegar, and Worcestershire sauce.
  6. Spread half of the glaze over the meatloaf.
  7. Bake for 60 minutes.
  8. Spread remaining glaze over the top.
  9. Bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Let rest for 10 minutes before slicing and serving.
