- 2 pounds ground beef (80/20 blend)
- 1 cup breadcrumbs (plain or Italian seasoned)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 green bell pepper, finely chopped
- 1/2 cup milk
- 2 large eggs, lightly beaten
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon vinegar (apple cider or white)
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan.
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, green bell pepper, milk, eggs, Worcestershire sauce, thyme, salt, and pepper.
- Gently mix until just combined.
- Transfer to the loaf pan, shaping evenly.
- In a small bowl, whisk together ketchup, brown sugar, vinegar, and Worcestershire sauce.
- Spread half of the glaze over the meatloaf.
- Bake for 60 minutes.
- Spread remaining glaze over the top.
- Bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
