- Juice of 1 lime
- 1/4 teaspoon salt
- Corn tortillas, cut into triangles
- Melted butter, for brushing
- Cinnamon sugar, for sprinkling
- Dulce de Leche Cupcakes:
- 1 box yellow cake mix (plus ingredients called for on the box)
- 1 can (13.4 ounces) dulce de leche
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Mexican Candy Display:
- Assorted Mexican candies (e.g., tamarind candies, spicy lollipops, mango gummies)
Instructions
- 1. Prepare the Churros: In a saucepan, bring water, butter, and salt to a boil. Add flour and stir vigorously until a dough forms. Remove from heat and let cool slightly. Beat in eggs one at a time until smooth. Pipe dough into hot oil and fry until golden brown. Toss with cinnamon sugar.
- 2. Bake Mexican Hot Chocolate Brownies: Prepare brownie mix according to package directions, stirring in cinnamon and cayenne pepper. Bake as directed. While still warm, top with mini marshmallows and broil briefly until lightly toasted.
- 3. Make Mango Salsa with Cinnamon Sugar Tortilla Chips: Combine mangoes, red onion, cilantro, jalapeno (if using), lime juice, and salt in a bowl. Brush tortilla triangles with melted butter and sprinkle with cinnamon sugar. Bake at 350°F (175°C) until golden brown and crispy.
- 4. Prepare Dulce de Leche Cupcakes: Bake cupcakes according to package directions. Whip heavy cream with powdered sugar until stiff peaks form. Fill cupcakes with dulce de leche and top with whipped cream.
