Description

Ingredients

  • 1 pound pasta (rotini, penne, or your favorite short pasta shape)
  • 1 red bell pepper, roasted, peeled, and diced
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 4 ounces mozzarella cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Prepare the ingredients: roast red pepper, slice the black olives, red onion, and cherry tomatoes. Cube the mozzarella cheese and chop the fresh basil.
  3. Make the dressing: In a small bowl, whisk together the mayonnaise, olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper. Taste and adjust seasonings as needed.
  4. In a large bowl, combine the cooked pasta, roasted red pepper, black olives, red onion, cherry tomatoes, mozzarella cheese, and fresh basil.
  5. Pour the dressing over the pasta salad and toss gently to coat all ingredients evenly.
  6. Cover the bowl and refrigerate for at least 30 minutes.
