Description
This pasta salad recipe includes roasted red peppers that add smoky sweetness. Perfect for BBQs, picnics, and potlucks.

- 1 pound pasta (rotini, penne, or your favorite short pasta shape)
- 1 red bell pepper, roasted, peeled, and diced
- 1/2 cup black olives, sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 4 ounces mozzarella cheese, cubed
- 1/4 cup fresh basil, chopped
- 1/2 cup mayonnaise
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse with cold water.
- Prepare the ingredients: roast red pepper, slice the black olives, red onion, and cherry tomatoes. Cube the mozzarella cheese and chop the fresh basil.
- Make the dressing: In a small bowl, whisk together the mayonnaise, olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper. Taste and adjust seasonings as needed.
- In a large bowl, combine the cooked pasta, roasted red pepper, black olives, red onion, cherry tomatoes, mozzarella cheese, and fresh basil.
- Pour the dressing over the pasta salad and toss gently to coat all ingredients evenly.
- Cover the bowl and refrigerate for at least 30 minutes.
