Ingredients

  • 1 pound rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, peeled, seeded, and diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup carrots, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup bottled Italian dressing (or homemade)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, green bell pepper, and carrots.
  3. Pour the Italian dressing over the pasta and vegetables. Toss gently to combine.
  4. Season with salt and freshly ground black pepper to taste.
