Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 3/4 cups buttermilk
  • 1/4 cup raisins or currants (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and grease a baking sheet.
  2. In a large bowl, whisk together flour, baking soda, salt, and sugar. Add raisins/currants if using.
  3. Make a well in the center and pour in buttermilk.
  4. Mix until just combined – do not overmix.
  5. Turn dough onto a floured surface and shape into a 1.5-inch thick round loaf.
  6. Place on baking sheet and cut a deep cross on top.
  7. Brush with beaten egg (optional).
  8. Bake for 30-35 minutes, until golden brown and a toothpick comes out clean.
  9. Cool on a wire rack before slicing and serving.
