- 1 cup orzo pasta (dry)n1 pint cherry tomatoes, halvedn1 medium cucumber, dicedn1/4 cup red onion, finely choppedn1/2 cup Kalamata olives, pitted and halvedn4 ounces feta cheese, crumbledn1/4 cup fresh parsley, choppedn2 tablespoons fresh mint, choppedn1/4 cup olive oiln2 tablespoons lemon juicen1 tablespoon red wine vinegarn1 clove garlic, mincedn1 teaspoon dried oreganon1/2 teaspoon salt, or to tasten1/4 teaspoon black pepper, or to taste
Instructions
- Cook the orzo pasta according to package directions. Drain and rinse with cold water.nIn a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and mint.nIn a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.n Pour dressing over salad and toss gently to combine. nCover and refrigerate for at least 30 minutes.
