Ingredients

  • 1 package (1/4 ounce) active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm water (105-115°F)
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices, quartered
  • 1/4 cup grated Parmesan cheese
  • Optional: Olives, bell peppers, mushrooms, sausage, etc.

Instructions

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let stand for 5-10 minutes, or until foamy.
  2. In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
  4. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Preheat oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.
  6. Punch down the dough, and turn it out onto a lightly floured surface. Roll the dough out to about 1/4 inch thickness. Use a 1-inch cookie cutter or knife to cut out small circles of dough.
  7. Place the dough circles onto the prepared baking sheet. Spread a small amount of pizza sauce onto each circle, leaving a small border. Sprinkle with mozzarella cheese, pepperoni, and any other desired toppings.
  8. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Sprinkle with Parmesan cheese in the last minute of baking.
  9. Let the Mini Pizza Bites cool slightly before serving. Serve warm and enjoy!
