- 1 package (1/4 ounce) active dry yeast
- 1 teaspoon sugar
- 1 cup warm water (105-115°F)
- 2 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup pepperoni slices, quartered
- 1/4 cup grated Parmesan cheese
- Optional: Olives, bell peppers, mushrooms, sausage, etc.
Instructions
- In a small bowl, dissolve the yeast and sugar in warm water. Let stand for 5-10 minutes, or until foamy.
- In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Stir until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
- Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Preheat oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.
- Punch down the dough, and turn it out onto a lightly floured surface. Roll the dough out to about 1/4 inch thickness. Use a 1-inch cookie cutter or knife to cut out small circles of dough.
- Place the dough circles onto the prepared baking sheet. Spread a small amount of pizza sauce onto each circle, leaving a small border. Sprinkle with mozzarella cheese, pepperoni, and any other desired toppings.
- Bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Sprinkle with Parmesan cheese in the last minute of baking.
- Let the Mini Pizza Bites cool slightly before serving. Serve warm and enjoy!
