- 1 pound rotini pasta
- 1 cup ranch dressing
- ½ cup mayonnaise
- 2 tbsp milk
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets, lightly steamed or blanched
- ½ cup red onion, finely diced
- ½ cup shredded carrots
- ½ cup cucumber, diced
- ½ cup shredded cheddar cheese (optional)
- 1 cup cooked and cubed ham or chicken (optional)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried dill
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to the package directions until al dente. Drain well and rinse with cold water.
- Prepare all vegetables: halve the tomatoes, dice the onion and cucumber, shred the carrots, and steam the broccoli.
- In a large bowl, combine the cooked pasta, prepared vegetables, cheese (if using), and protein (if using).
- In a separate bowl, whisk together the ranch dressing, mayonnaise, milk, salt, pepper, garlic powder, and dried dill.
- Pour the dressing over the pasta mixture and toss gently to coat evenly.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Garnish with fresh parsley and serve cold.
