Description
A classic and easy to make Ranch Pasta Salad with rotini pasta, fresh vegetables, and a creamy homemade ranch dressing. Perfect for potlucks, barbecues, and quick weeknight meals.

- 1 pound rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, peeled, seeded, and diced
- 1 cup red onion, finely chopped
- 1 cup bell pepper (any color), diced
- 1/2 cup shredded carrots
- 1/4 cup fresh parsley, chopped
- 1 cup mayonnaise
- 1 cup buttermilk
- 1 packet ranch dressing mix (1 ounce)
- 1 tablespoon white vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Cook the pasta according to package directions. Drain and rinse with cold water.
- Prepare the vegetables as described in the ingredients list.
- In a large bowl, whisk together the mayonnaise, buttermilk, ranch dressing mix, white vinegar, garlic powder, and black pepper.
- Add the cooked pasta and prepared vegetables to the bowl with the ranch dressing. Gently toss to coat everything evenly.
- Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld together. Serve cold and enjoy!!
