A classic and easy to make Ranch Pasta Salad with rotini pasta, fresh vegetables, and a creamy homemade ranch dressing. Perfect for potlucks, barbecues, and quick weeknight meals.


Ingredients

  • 1 pound rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, peeled, seeded, and diced
  • 1 cup red onion, finely chopped
  • 1 cup bell pepper (any color), diced
  • 1/2 cup shredded carrots
  • 1/4 cup fresh parsley, chopped
  • 1 cup mayonnaise
  • 1 cup buttermilk
  • 1 packet ranch dressing mix (1 ounce)
  • 1 tablespoon white vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta according to package directions. Drain and rinse with cold water.
  2. Prepare the vegetables as described in the ingredients list.
  3. In a large bowl, whisk together the mayonnaise, buttermilk, ranch dressing mix, white vinegar, garlic powder, and black pepper.
  4. Add the cooked pasta and prepared vegetables to the bowl with the ranch dressing. Gently toss to coat everything evenly.
  5. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld together. Serve cold and enjoy!!
