Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 medium head cabbage, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 4 cups chicken broth
  • 1 cup milk or heavy cream
  • Salt and pepper to taste
  • Optional Toppings: Chopped chives, crumbled bacon, sour cream

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in cabbage and cook until wilted, about 5 minutes.
  4. Add potatoes and chicken broth. Bring to a boil, then simmer for 15 20 minutes until potatoes are tender.
  5. Use an immersion blender to partially blend the soup.
  6. Stir in milk or cream, season with salt and pepper. Heat through, do not boil.
  7. Serve hot, garnished with chives, bacon, or sour cream.
