This rich and hearty colcannon soup is a comforting Irish classic. Creamy potatoes and tender cabbage create a soul warming soup perfect for any occasion.

- 2 pounds potatoes, peeled and cubed
- 1 medium head cabbage, shredded
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 tablespoons butter
- 4 cups chicken broth
- 1 cup milk or heavy cream
- Salt and pepper to taste
- Optional Toppings: Chopped chives, crumbled bacon, sour cream
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in cabbage and cook until wilted, about 5 minutes.
- Add potatoes and chicken broth. Bring to a boil, then simmer for 15 20 minutes until potatoes are tender.
- Use an immersion blender to partially blend the soup.
- Stir in milk or cream, season with salt and pepper. Heat through, do not boil.
- Serve hot, garnished with chives, bacon, or sour cream.
