Description

  • 2 (8-10 ounce) New York strip steaks, about 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the steaks dry with paper towels and season generously with salt and pepper.
  2. In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme, and red pepper flakes (if using). Mix well and set aside.
  3. Heat olive oil in a heavy bottomed skillet (preferably cast iron) over medium high heat until shimmering.
  4. Carefully place the steaks in the hot skillet and sear for 3 to 4 minutes on each side for medium rare, or until desired doneness. For medium, cook about 5 to 6 minutes per side. For medium well, cook about 7 to 8 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 130 to 135°F (54 to 57°C) for medium rare.
  5. During the last minute of cooking, add a generous spoonful of garlic herb butter to the skillet. Tilt the pan and use a spoon to baste the steaks with the melted butter.
  6. Remove the steaks from the skillet and let them rest for 5 to 10 minutes before slicing. This allows the juices to redistribute, resulting in a more tender steak.
  7. While the steaks are resting, preheat the oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and pepper. Spread on a baking sheet and roast for 10 to 12 minutes, or until tender crisp.
  8. Slice the steaks against the grain and top with any remaining garlic herb butter. Serve immediately with the roasted asparagus.
