Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the milk, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes.
- Gradually add the boiling water to the batter, mixing until just combined. The batter will be thin.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Add the milk and vanilla extract to the frosting. Beat until smooth and creamy. Add gel food coloring to achieve desired results.
- Once the cakes are completely cool, level them with a serrated knife.
- Place one cake layer on a serving plate or cake stand. Spread a generous layer of frosting over the top.
- Carefully place the second cake layer on top of the frosting. Frost the entire cake with the remaining frosting.
- Decorate the cake with sprinkles, fondant figures, and graduation caps.
