Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Gel food coloring of your choice
  • Sprinkles (various colors and shapes)
  • Miniature graduation caps (optional)
  • Fondant (optional, for creating figures)
  • Edible glitter (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the milk, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes.
  4. Gradually add the boiling water to the batter, mixing until just combined. The batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
  9. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  10. Add the milk and vanilla extract to the frosting. Beat until smooth and creamy. Add gel food coloring to achieve desired results.
  11. Once the cakes are completely cool, level them with a serrated knife.
  12. Place one cake layer on a serving plate or cake stand. Spread a generous layer of frosting over the top.
  13. Carefully place the second cake layer on top of the frosting. Frost the entire cake with the remaining frosting.
  14. Decorate the cake with sprinkles, fondant figures, and graduation caps.
