  • 34 pound beef brisket
  • 1 tablespoon olive oil
  • 2 tablespoons smoked paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup barbecue sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Trim excess fat from the brisket and rub with the dry rub mixture.
  2. Heat olive oil in a skillet and sear the brisket on all sides until browned.
  3. Place sliced onion and minced garlic in the bottom of a slow cooker.
  4. Place the seared brisket on top.
  5. Whisk together beef broth, barbecue sauce, apple cider vinegar, and Worcestershire sauce. Pour over the brisket.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until fork tender.
  7. Remove the brisket and let it rest for 10-15 minutes before shredding or slicing.
  8. Spoon cooking liquid over the brisket and serve.
