Tender corned beef and cabbage cooked low and slow in a crockpot, delivering a classic Irish comfort food meal with minimal effort.


Ingredients

  • 3 pounds corned beef brisket, with spice packet
  • 1 large yellow onion, quartered
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 1.5 pounds potatoes, quartered
  • 1 medium head cabbage, cored and cut into wedges
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse corned beef brisket and pat dry.
  2. Place onion in the bottom of the slow cooker.
  3. Add corned beef brisket on top, sprinkle with spice packet.
  4. Add carrots, potatoes, and garlic around the beef. Tuck in bay leaf.
  5. Pour beef broth over ingredients, sprinkle with thyme and pepper.
  6. Cook on low for 7-8 hours or high for 4-5 hours.
  7. Add cabbage during the last 2 hours of cooking.
  8. Remove corned beef and let rest 10-15 minutes, then slice.
  9. Serve with cabbage and potatoes, and some broth.
