- 3 pounds corned beef brisket, with spice packet
- 1 large yellow onion, quartered
- 1 pound carrots, peeled and cut into 2-inch pieces
- 1.5 pounds potatoes, quartered
- 1 medium head cabbage, cored and cut into wedges
- 1 cup beef broth
- 2 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
Instructions
- Rinse corned beef brisket and pat dry.
- Place onion in the bottom of the slow cooker.
- Add corned beef brisket on top, sprinkle with spice packet.
- Add carrots, potatoes, and garlic around the beef. Tuck in bay leaf.
- Pour beef broth over ingredients, sprinkle with thyme and pepper.
- Cook on low for 7-8 hours or high for 4-5 hours.
- Add cabbage during the last 2 hours of cooking.
- Remove corned beef and let rest 10-15 minutes, then slice.
- Serve with cabbage and potatoes, and some broth.
