Description

Ingredients

  • 3 to 4 pound Corned Beef Brisket, with spice packet
  • 1 large Yellow Onion, roughly chopped
  • 4 medium Carrots, peeled and cut into 2 inch pieces
  • 3 medium Yukon Gold Potatoes, quartered
  • 1 medium head Cabbage, cut into wedges
  • 4 cups Beef Broth
  • 3 cloves Garlic, minced
  • 2 Bay Leaves
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Black Peppercorns

Instructions

  1. Rinse the corned beef brisket under cold water and pat dry.
  2. Place onion, carrots, and potatoes in the bottom of the slow cooker.
  3. Place corned beef on top of vegetables, fat side up.
  4. In a bowl, mix beef broth, garlic, bay leaves, thyme, and peppercorns. Pour over corned beef.
  5. Sprinkle spice packet evenly over the meat.
  6. Cover and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until tender.
  7. Add cabbage wedges 2 hours before end time.
  8. Let corned beef rest for 10 to 15 minutes before slicing against the grain.
  9. Serve hot.
