  • 2 pounds beef chuck, cut into 1 inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all purpose flour
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 pound Yukon gold potatoes, peeled and cubed
  • 1 cup baby bella mushrooms, quartered
  • 1 cup frozen peas
  • 1 (12 ounce) bottle of Guinness stout
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. In a large skillet, heat olive oil over medium high heat. Season beef with salt and pepper, then dredge in flour, shaking off any excess. Sear the beef in batches until browned on all sides.
  2. Add the chopped onion, carrots, and celery to the skillet and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour the Guinness stout into the skillet and scrape up any browned bits from the bottom. Simmer for 2 minutes to reduce slightly.
  4. Transfer the seared beef and sautéed vegetables to the slow cooker. Pour in the beef broth, tomato paste, and Worcestershire sauce. Add the dried thyme and bay leaf.
  5. Stir in the cubed potatoes and quartered mushrooms. Make sure all the ingredients are submerged in the liquid.
  6. Cover the slow cooker and cook on low for 8 10 hours, or on high for 4 5 hours, or until the beef is fork tender.
  7. During the last 30 minutes of cooking, stir in the frozen peas.
