Description
These delicious sourdough cheesy breadsticks feature a tangy sourdough base topped with melted mozzarella and parmesan, seasoned with garlic and herbs. A perfect appetizer or side dish!

- 1 cup (240ml) warm water (about 105-115°F)
- 1 teaspoon sugar
- 2 teaspoons active dry yeast
- 1 cup (240g) active sourdough starter (fed and bubbly)
- 2 1/2 cups (300g) all-purpose flour, plus more for dusting
- 2 tablespoons olive oil, plus more for drizzling
- 1 teaspoon salt
- 4 tablespoons (56g) unsalted butter, melted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups (226g) shredded mozzarella cheese
- 1/2 cup (50g) grated Parmesan cheese
- Optional: Red pepper flakes, for sprinkling
Instructions
- In a large bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
- Add the sourdough starter, flour, olive oil, and salt to the yeast mixture. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
- Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 1-2 hours, or until doubled in size.
- While the dough is rising, prepare the topping. In a small bowl, combine the melted butter, minced garlic, oregano, salt, and pepper.
- Preheat your oven to 400°F (200°C).
- Gently punch down the dough to release the air. Turn it out onto a lightly floured surface and roll it into a large rectangle, about 12×16 inches.
- Brush the melted butter mixture evenly over the dough. Sprinkle with the mozzarella and Parmesan cheeses. Add red pepper flakes if desired.
- Use a pizza cutter or sharp knife to cut the dough into strips, about 1 inch wide.
- Gently twist each strip and arrange them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until the breadsticks are golden brown and the cheese is melted and bubbly.
- Let the breadsticks cool slightly on the baking sheet before serving. Drizzle with a little extra olive oil, if desired.
