Ingredients

  • 4 ears of fresh corn, shucked
  • 2 ripe avocados, diced
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup crumbled cotija cheese (optional)

Instructions

  1. Grill or boil the corn until tender.
  2. Cut the kernels off the cob.
  3. In a large bowl, combine the corn kernels, diced avocado, red onion, jalapeño (if using), and cilantro.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and gently toss to combine.
  6. If using, gently stir in the crumbled cotija cheese.
  7. Serve immediately or chill for later.
