- 4 ears of fresh corn, shucked
- 2 ripe avocados, diced
- 1/4 cup red onion, finely diced
- 1 small jalapeño, seeded and minced (optional)
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup crumbled cotija cheese (optional)
Instructions
- Grill or boil the corn until tender.
- Cut the kernels off the cob.
- In a large bowl, combine the corn kernels, diced avocado, red onion, jalapeño (if using), and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- If using, gently stir in the crumbled cotija cheese.
- Serve immediately or chill for later.
