  • 1 (20-ounce) can pineapple chunks, undrained
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups cooked rice
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. 1. Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes. Set aside.
  2. 2. Sauté Vegetables: In the same skillet, add onion and garlic. Sauté until softened, about 3-4 minutes. Add bell peppers and cook until slightly tender, 3-4 minutes.
  3. 3. Make Pineapple Sauce: In a bowl, whisk together undrained pineapple chunks, soy sauce, brown sugar, cornstarch, ginger, and red pepper flakes (if using).
  4. 4. Combine Everything: Pour pineapple sauce into the skillet with vegetables. Bring to a simmer, stirring constantly, until the sauce thickens, about 2-3 minutes. Reduce heat to low.
  5. 5. Add Chicken and Simmer: Return chicken to the skillet with sauce and vegetables. Stir to coat evenly. Simmer for 5-7 minutes, allowing flavors to meld.
