- 1 medium head of green cabbage, finely shredded (about 6 cups)
- 2 medium carrots, shredded (about 1 cup)
- 1/2 medium red onion, finely chopped (about 1/2 cup)
- 1 cup mayonnaise
- 1/4 cup granulated sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon celery seed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the shredded cabbage, carrots, and red onion.
- In a separate medium bowl, whisk together the mayonnaise, sugar, apple cider vinegar, Dijon mustard, celery seed, salt, and pepper until smooth.
- Pour the dressing over the vegetables and toss gently until evenly coated.
- Cover the bowl and refrigerate for at least 30 minutes, or preferably 2 hours, to allow the flavors to meld.
- Toss again before serving and enjoy cold.
