A flavorful Taco Pasta Salad, perfect for potlucks and summer gatherings.
Ingredients

- 1 pound rotini pasta
- 1 pound lean ground beef
- 1 ounce taco seasoning
- 1/4 cup water
- 1 1/2 cups shredded cheddar cheese
- 1 cup halved cherry tomatoes
- 1/2 cup sliced black olives
- 1/4 cup chopped green onions
- 1 cup corn (canned or frozen, thawed)
- 1 cup ranch dressing
- 1/2 cup sour cream
- 1/4 cup salsa
- 2 cups shredded lettuce
Instructions
- Cook pasta according to package directions, then drain and rinse.
- Brown ground beef in a skillet, drain excess fat, and add taco seasoning and water. Simmer for 5-7 minutes.
- In a large bowl, combine cooked pasta, ground beef mixture, cheese, tomatoes, olives, green onions, and corn.
- In a separate bowl, whisk together ranch dressing, sour cream, and salsa.
- Pour dressing over pasta mixture and toss gently to combine.
- Stir in shredded lettuce just before serving.
- Chill for at least 30 minutes before serving.
