Ingredients

  • 1 pound rotini pasta
  • 1 pound lean ground beef
  • 1 ounce taco seasoning
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup halved cherry tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1 cup corn (canned or frozen, thawed)
  • 1 cup ranch dressing
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 2 cups shredded lettuce

Instructions

  1. Cook pasta according to package directions, then drain and rinse.
  2. Brown ground beef in a skillet, drain excess fat, and add taco seasoning and water. Simmer for 5-7 minutes.
  3. In a large bowl, combine cooked pasta, ground beef mixture, cheese, tomatoes, olives, green onions, and corn.
  4. In a separate bowl, whisk together ranch dressing, sour cream, and salsa.
  5. Pour dressing over pasta mixture and toss gently to combine.
  6. Stir in shredded lettuce just before serving.
  7. Chill for at least 30 minutes before serving.
