  • 1 (3 to 4 pound) corned beef brisket, with spice packet
  • 1 large onion, quartered
  • 4 carrots, peeled and cut into 2 inch pieces
  • 4 celery stalks, cut into 2 inch pieces
  • 4 cloves garlic, smashed
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon black peppercorns
  • 1 bay leaf

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, spread the onion, carrots, celery, and garlic.
  3. Rinse the corned beef and place it on top of the vegetables, fat side up.
  4. Pour in the beef broth and water. Add the vinegar, peppercorns, bay leaf, and spice packet.
  5. Cover and bake for 3 to 3.5 hours, or until fork tender.
  6. Let the corned beef rest in the cooking liquid for 15 to 20 minutes.
  7. Slice against the grain and serve with the cooked vegetables.
