- 1 (3 to 4 pound) corned beef brisket, with spice packet
- 1 large onion, quartered
- 4 carrots, peeled and cut into 2 inch pieces
- 4 celery stalks, cut into 2 inch pieces
- 4 cloves garlic, smashed
- 2 cups beef broth
- 1 cup water
- 1 tablespoon apple cider vinegar
- 1 teaspoon black peppercorns
- 1 bay leaf
Instructions
- Preheat the oven to 325°F (160°C).
- In a large Dutch oven, spread the onion, carrots, celery, and garlic.
- Rinse the corned beef and place it on top of the vegetables, fat side up.
- Pour in the beef broth and water. Add the vinegar, peppercorns, bay leaf, and spice packet.
- Cover and bake for 3 to 3.5 hours, or until fork tender.
- Let the corned beef rest in the cooking liquid for 15 to 20 minutes.
- Slice against the grain and serve with the cooked vegetables.
