  • For the Cake:
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • For the Apple Filling:
  • 3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Optional Topping:
  • 2 tablespoons butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9 inch round cake pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. In another bowl, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
  7. Pour half of the cake batter into the prepared cake pan.
  8. Spread the apple mixture evenly over the batter.
  9. Gently spoon the remaining batter over the apples.
  10. If using the optional topping, combine the melted butter, sugar, and cinnamon in a small bowl. Sprinkle evenly over the top of the cake.
  11. Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
