Description

A creamy and comforting Irish side dish made with mashed potatoes, cabbage, and green onions. Perfect for St. Patrick’s Day or any cozy night in.


Ingredients

  • 2.5 pounds russet potatoes, peeled and quartered
  • 1/2 cup milk
  • 1/4 cup butter, plus more for serving
  • 1 medium head of green cabbage, thinly sliced
  • 1 cup chopped green onions
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced cabbage and cook, stirring occasionally, until softened, about 8-10 minutes.
  3. Add the chopped green onions to the skillet with the cabbage and cook for another 2-3 minutes until they are slightly softened.
  4. Once the potatoes are cooked, drain them well and return them to the pot. Mash the potatoes until smooth using a potato masher or ricer.
  5. Heat the milk and remaining 2 tablespoons of butter in a small saucepan until the butter is melted.
  6. Slowly pour the warm milk and butter mixture into the mashed potatoes, stirring until well combined.
  7. Stir in the cooked cabbage and green onion mixture into the mashed potatoes. Season with salt, pepper, and a pinch of nutmeg (if using) to taste.
  8. Serve immediately with a knob of butter on top.
