Description
A creamy and comforting Irish side dish made with mashed potatoes, cabbage, and green onions. Perfect for St. Patrick’s Day or any cozy night in.

- 2.5 pounds russet potatoes, peeled and quartered
- 1/2 cup milk
- 1/4 cup butter, plus more for serving
- 1 medium head of green cabbage, thinly sliced
- 1 cup chopped green onions
- Salt and pepper to taste
- Pinch of nutmeg (optional)
Instructions
- Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
- While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced cabbage and cook, stirring occasionally, until softened, about 8-10 minutes.
- Add the chopped green onions to the skillet with the cabbage and cook for another 2-3 minutes until they are slightly softened.
- Once the potatoes are cooked, drain them well and return them to the pot. Mash the potatoes until smooth using a potato masher or ricer.
- Heat the milk and remaining 2 tablespoons of butter in a small saucepan until the butter is melted.
- Slowly pour the warm milk and butter mixture into the mashed potatoes, stirring until well combined.
- Stir in the cooked cabbage and green onion mixture into the mashed potatoes. Season with salt, pepper, and a pinch of nutmeg (if using) to taste.
- Serve immediately with a knob of butter on top.
