  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • For the Lemon Pudding:
  • 1 1/2 cups granulated sugar
  • 1/4 cup all purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter, cut into pieces
  • 1/2 teaspoon almond extract

Instructions

  1. 1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. 2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. 3. In a large bowl, cream together the softened butter and 3/4 cup of sugar until light and fluffy.
  4. 4. Beat in the egg and vanilla extract.
  5. 5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. 6. Pour the batter into the prepared baking pan.
  7. 7. In a separate bowl, whisk together the 1 1/2 cups of sugar, flour, and salt for the pudding layer.
  8. 8. Stir in the milk, lemon juice, lemon zest, and almond extract. Mix well.
  9. 9. Pour the lemon mixture evenly over the cake batter.
  10. 10. Dot the top of the lemon mixture with the butter pieces.
  11. 11. Bake for 45-50 minutes, or until the cake is golden brown and the pudding is set.
