- For the Cake:
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup milk
- For the Lemon Pudding:
- 1 1/2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter, cut into pieces
- 1/2 teaspoon almond extract
Instructions
- 1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- 2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- 3. In a large bowl, cream together the softened butter and 3/4 cup of sugar until light and fluffy.
- 4. Beat in the egg and vanilla extract.
- 5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- 6. Pour the batter into the prepared baking pan.
- 7. In a separate bowl, whisk together the 1 1/2 cups of sugar, flour, and salt for the pudding layer.
- 8. Stir in the milk, lemon juice, lemon zest, and almond extract. Mix well.
- 9. Pour the lemon mixture evenly over the cake batter.
- 10. Dot the top of the lemon mixture with the butter pieces.
- 11. Bake for 45-50 minutes, or until the cake is golden brown and the pudding is set.
- 12. Let cool completely before serving.
