Ingredients

  • 4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 3/4 cups buttermilk
  • 2 tablespoons unsalted butter, cold and cut into small cubes
  • Optional: 1/4 cup raisins or currants

Instructions

  1. Preheat oven to 425°F (220°C). Grease a baking sheet.
  2. In a large bowl, whisk flour, baking soda, and salt.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Stir in raisins or currants, if using.
  5. Make a well in the center and pour in buttermilk.
  6. Mix until just combined. Dough should be slightly sticky.
  7. Turn dough onto a floured surface. Shape into a round.
  8. Place on baking sheet. Cut a deep cross into the top.
  9. Bake for 3040 minutes, or until golden brown and sounds hollow.
  10. Cool slightly on a wire rack before slicing and serving.
