Ingredients

  • 2 (6 ounce) Filet Mignon Steaks, about 1.5 inches thick
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 cloves Garlic, minced
  • 2 sprigs Fresh Rosemary
  • 2 pounds Yukon Gold Potatoes, peeled and quartered
  • 1/2 cup Heavy Cream
  • 4 tablespoons Butter
  • 2 cloves Garlic, minced
  • Salt and Pepper to taste
  • 1 pound Asparagus, trimmed
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper on a baking sheet. Roast for 10-12 minutes or until tender-crisp.
  2. Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add heavy cream, butter, and minced garlic. Mash until smooth and creamy. Season with salt and pepper to taste.
  3. Pat steaks dry with paper towels and season with salt and pepper. Heat olive oil in a cast-iron skillet over medium-high heat. Add steaks to the hot skillet and sear for 3-4 minutes per side for medium-rare. Add minced garlic and rosemary to the skillet during the last minute of cooking, basting the steaks with the flavored oil.
  4. Remove steaks from the skillet and let rest for 5-10 minutes before serving.
