- 2 (6 ounce) Filet Mignon Steaks, about 1.5 inches thick
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 cloves Garlic, minced
- 2 sprigs Fresh Rosemary
- 2 pounds Yukon Gold Potatoes, peeled and quartered
- 1/2 cup Heavy Cream
- 4 tablespoons Butter
- 2 cloves Garlic, minced
- Salt and Pepper to taste
- 1 pound Asparagus, trimmed
- 1 tablespoon Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper on a baking sheet. Roast for 10-12 minutes or until tender-crisp.
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add heavy cream, butter, and minced garlic. Mash until smooth and creamy. Season with salt and pepper to taste.
- Pat steaks dry with paper towels and season with salt and pepper. Heat olive oil in a cast-iron skillet over medium-high heat. Add steaks to the hot skillet and sear for 3-4 minutes per side for medium-rare. Add minced garlic and rosemary to the skillet during the last minute of cooking, basting the steaks with the flavored oil.
- Remove steaks from the skillet and let rest for 5-10 minutes before serving.
