Description

Ingredients

  • 1 pound filet mignon, cut into two equal portions
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Fresh rosemary sprigs, for garnish
  • n**For the Garlic Mashed Potatoes:**
  • 2 pounds Yukon gold potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • n**For the Roasted Asparagus:**
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the filet mignon dry with paper towels. Season with salt, pepper, and thyme.
  2. Heat olive oil in a skillet over medium high heat. Sear each side of the filet mignon for 3-4 minutes, until nicely browned.
  3. Remove the filet mignon from the skillet and set aside. Add minced garlic to the skillet and cook until fragrant about 30 seconds. Pour in beef broth and scrape up any browned bits from the bottom of the skillet.
  4. Let the broth simmer for 5 minutes, then stir in heavy cream and butter. Reduce the heat to low and let the sauce thicken slightly for another 5 minutes.
  5. Place the filet mignon back into the skillet with the sauce. Cook to your desired level of doneness. Use a thermometer. For medium its around 130-135 degrees.
  6. Boil the potatoes until they are fork tender. Drain well.
  7. Return the potatoes to the pot. Add the milk, butter, and minced garlic. Mash until smooth and creamy. Season with salt and pepper to taste.
  8. Preheat oven to 400 degrees F (200 degrees C). Toss asparagus with olive oil, salt, and pepper.
  9. Spread asparagus on a baking sheet and roast for 10-12 minutes, or until tender crisp.
  10. Plate the garlic mashed potatoes first, followed by the roasted asparagus. Place the seared filet mignon on top of the mashed potatoes and drizzle generously with the creamy sauce. Garnish with fresh rosemary sprigs for an extra touch of elegance.
