Ingredients

  • 1 pound fresh strawberries, large and ripe
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons heavy cream (optional, for a smoother filling)
  • Mini chocolate chips, sprinkles, or graham cracker crumbs (optional, for garnish)

Instructions

  1. 1. Wash and dry the strawberries thoroughly.
  2. 2. Using a paring knife, carefully cut out the stems of the strawberries, creating a small well in each one.
  3. 3. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. 4. Add the powdered sugar and vanilla extract to the cream cheese. Continue to beat until well combined. Add heavy cream if needed for smoother consistency.
  5. 5. Transfer the cheesecake filling to a piping bag or a zip top bag with the corner snipped off.
  6. 6. Pipe or spoon the cheesecake filling into the hollowed out strawberries, filling them to the top.
