- 1 pound fresh strawberries, large and ripe
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon vanilla extract
- 2 tablespoons heavy cream (optional, for a smoother filling)
- Mini chocolate chips, sprinkles, or graham cracker crumbs (optional, for garnish)
Instructions
- 1. Wash and dry the strawberries thoroughly.
- 2. Using a paring knife, carefully cut out the stems of the strawberries, creating a small well in each one.
- 3. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- 4. Add the powdered sugar and vanilla extract to the cream cheese. Continue to beat until well combined. Add heavy cream if needed for smoother consistency.
- 5. Transfer the cheesecake filling to a piping bag or a zip top bag with the corner snipped off.
- 6. Pipe or spoon the cheesecake filling into the hollowed out strawberries, filling them to the top.
- 7. If desired, garnish the strawberries with mini chocolate chips, sprinkles, or graham cracker crumbs.
- 8. Refrigerate the filled strawberries for at least 15 minutes before serving to allow the filling to firm up slightly.
