  • 4 cups cubed watermelon
  • 4 ounces feta cheese, cubed
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons balsamic glaze (optional)
  • Black Bean Salsa:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn kernels, thawed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Caprese Salad Skewers:
  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini)
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • Olive oil
  • Salt and pepper

Instructions

  1. Watermelon Feta Skewers:
  2. 1. Thread a piece of watermelon and a cube of feta cheese onto each skewer.
  3. 2. Arrange the skewers on a serving platter.
  4. 3. Sprinkle with chopped mint.
  5. 4. Drizzle with balsamic glaze, if desired.
  6. 5. Serve immediately.
  7. Black Bean Salsa:
  8. 1. In a large bowl, combine the black beans, corn, bell pepper, red onion, jalapeño, and cilantro.
  9. 2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  10. 3. Pour the dressing over the salsa and toss to combine.
  11. 4. Chill for at least 30 minutes before serving.
  12. 5. Serve with tortilla chips or vegetables.
  13. Caprese Salad Skewers:
  14. 1. Thread a tomato, a mozzarella ball, and a basil leaf onto each skewer.
  15. 2. Arrange the skewers on a serving platter.
