- Watermelon Feta Skewers:
- 4 cups cubed watermelon
- 4 ounces feta cheese, cubed
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons balsamic glaze (optional)
- Black Bean Salsa:
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn kernels, thawed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeño, seeded and minced
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Caprese Salad Skewers:
- 1 pint cherry tomatoes
- 8 ounces fresh mozzarella balls (bocconcini)
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- Olive oil
- Salt and pepper
Instructions
- Watermelon Feta Skewers:
- 1. Thread a piece of watermelon and a cube of feta cheese onto each skewer.
- 2. Arrange the skewers on a serving platter.
- 3. Sprinkle with chopped mint.
- 4. Drizzle with balsamic glaze, if desired.
- 5. Serve immediately.
- Black Bean Salsa:
- 1. In a large bowl, combine the black beans, corn, bell pepper, red onion, jalapeño, and cilantro.
- 2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- 3. Pour the dressing over the salsa and toss to combine.
- 4. Chill for at least 30 minutes before serving.
- 5. Serve with tortilla chips or vegetables.
- Caprese Salad Skewers:
- 1. Thread a tomato, a mozzarella ball, and a basil leaf onto each skewer.
- 2. Arrange the skewers on a serving platter.
- 3. Lightly drizzle with olive oil and balsamic glaze.
- 4. Season with salt and pepper.
- 5. Serve immediately.
