- 4 cups cubed watermelon
- 2 cups thinly sliced cucumber (I prefer English cucumbers)
- ½ cup thinly sliced red onion
- ¼ cup chopped fresh mint
- ¼ cup crumbled feta cheese (optional, omit for vegan)
- 3 tablespoons olive oil
- 2 tablespoons lime juice (freshly squeezed, please!)
- 1 tablespoon white balsamic vinegar
- 1 teaspoon honey or maple syrup (adjust to taste)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large bowl, combine the cubed watermelon, sliced cucumber, and red onion.
- In a small bowl, whisk together the olive oil, lime juice, white balsamic vinegar, honey (or maple syrup), salt, and pepper until well combined. Taste and adjust seasonings to your liking.
- Pour the dressing over the watermelon and cucumber mixture. Gently toss to coat evenly. Be careful not to overmix, as watermelon can get mushy.
- Sprinkle the chopped fresh mint and crumbled feta cheese (if using) over the salad.
- Chill the salad in the refrigerator for at least 15-20 minutes before serving. This allows the flavors to meld together. Serve cold and enjoy!
