- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 cup heavy cream, cold
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup granola (optional)
- Fresh mint leaves, for garnish (optional)
Instructions
- 1. Prepare the Berry Mixture: In a medium bowl, combine the mixed berries, granulated sugar, and lemon juice. Gently stir and allow the mixture to sit for about 10 minutes, allowing the berries to release their juices.
- 2. Whip the Cream: In a separate bowl, or using a stand mixer, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overwhip.
- 3. Assemble the Parfaits: In parfait glasses or clear cups, begin layering. If using the optional granola, start with a layer of granola at the bottom.
- 4. Add the Berry Layer: Spoon a layer of the berry mixture over the granola (or directly onto the bottom of the glass).
- 5. Add the Creamy Layer: Top with a layer of whipped cream.
- 6. Repeat Layers: Continue layering granola (if using), berry mixture, and whipped cream until the glasses are filled.
- 7. Garnish and Serve: Garnish with fresh mint leaves, if desired. Chill for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled and enjoy!
