- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs

- 1/2 cup peach puree (from about 2 peaches)
- 1/4 cup prosecco (or sparkling cider)
- **For the Bellini Buttercream Frosting:**
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tablespoons peach puree
- 2 tablespoons prosecco (or sparkling cider)
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a small bowl, combine peach puree and prosecco.
- Gradually add dry ingredients to wet ingredients, alternating with peach prosecco mixture, beginning and ending with dry ingredients. Mix until just combined.
- Fill each cupcake liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
- Make frosting: Beat softened butter until light and fluffy. Gradually add powdered sugar, beating until well combined.
- Stir in peach puree, prosecco, and salt. Beat until smooth and creamy.
- Frost cooled cupcakes with Bellini buttercream. Garnish with fresh peach slices and edible glitter, if desired.
