  • 1/2 cup peach puree (from about 2 peaches)
  • 1/4 cup prosecco (or sparkling cider)
  • **For the Bellini Buttercream Frosting:**
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons peach puree
  • 2 tablespoons prosecco (or sparkling cider)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a small bowl, combine peach puree and prosecco.
  6. Gradually add dry ingredients to wet ingredients, alternating with peach prosecco mixture, beginning and ending with dry ingredients. Mix until just combined.
  7. Fill each cupcake liner about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool in muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. Make frosting: Beat softened butter until light and fluffy. Gradually add powdered sugar, beating until well combined.
  11. Stir in peach puree, prosecco, and salt. Beat until smooth and creamy.
  12. Frost cooled cupcakes with Bellini buttercream. Garnish with fresh peach slices and edible glitter, if desired.
